At Casa Colorado we are always cooking fresh, organic meals from scratch, and we are committed to bringing guests seasonal and local foods when available. Breakfast is included in rates, and dinner is offered for $45 per person, including appetizer, main course, dessert, and a bottle of house wine. We encourage staying home for dinner to enjoy the scenery and the best culinary choices in the area!

What we had for dinner last night at Casa Colorado:

Tossed garden greens with a ginger-miso dressing, topped with spicy red chili shrimps and toasted sesame seeds with a scallion whole wheat cake. For our main we had forbidden rice and anasazi beans cakes in a coconut citrus broth, accompanied with garlic scapes, exotic mushrooms, and bok choi. Dessert was an elegant dense chocolate torte with a spiked cherry sauce. Our guests, and our bellies said that it was "Delicious!"

  • Macademia encrusted Halibut with fruit chutney
  • Steamed vegetables with udon noodles, served with original peanut sauce

  • Creamy squash risotto topped with caramelized onions and fresh herbs
  • Polenta cake with grilled vegetables, homemade marinara, and local chevre cheese
